Sweet potato and scallops

If your standby supper is baked potatoes with tuna, why not switch to sweet potatoes with scallops instead? It’s the perfect way to spice things up and unlike regular potatoes, sweet potatoes count as one of your five-a-day!

Ingredients:

Sweet potato

Onion

Butter

Maple syrup

Balsamic vinegar

Pine nuts

Scallops

Method:

1. Place your sweet potato in the oven for around 45 minutes.

2. Meanwhile, fry some chopped onions in butter with maple syrup and a splash of balsamic vinegar.

3. Throw some pine nuts and scallops into the pan. Cook the scallops for around 10 minutes, turning them occasionally.

4. Add your favourite toppings to the sweet potato, serve with scallops and a little salad for a healthy and satisfying meal! 😇💪
