Tuna steak with homemade guacamole

Ingredients:

Tuna steak

Parsnips

Avocado

Garlic

Shallots

Chilli flakes

Tomatoes (fresh, tinned, or carton)

Gem lettuce

Radish

Blueberries

Step 1) Dice up a handful of parsnips and roast in the oven with some goose fat for 40 minutes.

Step 2) Fry some chopped garlic and shallots, give it a kick with some chilli flakes and throw in some butter then let cool. Add lime juice, salt and pepper into a bowl, then mash up an avocado or 2 for the guacamole. Add and mix in the fried garlic, shallots, and chilli.

Step 3) Begin to lightly fry your succulent tuna steak in butter. Add mixed, or Italian herbs and organic chopped tomatoes on top.

Step 4) Add your guacamole onto some little gem lettuce leaves and top with chopped radish or sun-dried tomatoes (and some blueberries! 😉)

Serve up and enjoy your super tasty meal.
